Produced in San Quintin, Baja California where the pristine cold waters of the Pacific are rich with plentiful algae year round. They have a robust salty punch with a sweet melon finish.
Raised in the deep bay off the eastern coast of Vancouver Island. They have incredibly soft and delicate texture, with crisp clean notes of watermelon rind on the palate and a wonderfully faint lingering of salinity on the tongue.
Harvested in Long Island, New York, the oyster's smooth texture pairs well to its playful salinity and rugged savory finish.
